Crackling Spinach

Crackling spinach is a childhood favorite of mine and I would always go with my parents to these indo-chinese Restaurants back in my city in India. This dish makes for a great appetiser or side dish with hints of sweet and spicy deep fried spinach leaves.
Ingredients
1 cup or 60 gms spinach leaves
1 tbsp or 8 grams chopped dry red chillies
1 tbsp or 8 grams roasted white sesame seeds
2 tbsp or 16 grams cornstarch powder
1 tsp or 5 ml sesame oil
1 tsp or 5 gms sugar
Cooking oil for deep frying
salt to taste
Method
– Wash the spinach and dry it out on a tea towel to completely absorb all the water on both sides for atleast 5 minutes. Place 5-6 leaves on top of each other, roll and chop into fine strips. Repeat the procedure for all leaves. Softly seperate using your fingers.
-Mix corn starch to the spinach leaves . Heat up the Cooking oil – once it is hot – deep fry (use a fryer if you got one or use a metal strainer to create one) the spinach till crispy and place them on a oil absorbent paper.
– Heat the sesame oil in a small pan and remove once its hot. Add in the crushed dried chillies followed by crispy spinach, salt to taste, sugar and the roasted sesame and mix gently.
Serve immediately! One shouldn’t make the crisp things wait – enjoy!
